Beetroot Khandvi / Patudi / Besan Rolls
Here is a healthy version of khandvi, a traditional gujarati snack.This mouthwatering dish is prepared with besan / gram flour and butter milk.
Red vibrant shades of beetroot always attracts me so thought to add into it.
There are two ways to add beetroot into it.First method is: boil beetroot, make paste and add into the besan batter.
Second is to grind it with water, remove fibers and add juice into the batter.
I used the second method, adding a cup of besan, curd, water and beetroot juice.The proportion of liquid should not more than 2 cup if besan is 1 cup.
Spiced up with green chilli, ginger paste, salt, turmeric and cooked slowly until the batter is thick like paste.Then spread it on a big plate, let it cool, cut into wide strips, carefully rolled and tempered with mustard, sesame seeds and curry leaves.
Fresh coconut and coriander sprinkled on the top, served with green chatney.
This khandvi is very tasty, light and melts in your mouth.
