Surti special vati daal Khaman is a soft, spongy n spicy savoury dish? It is our favourite breakfast without which our Sunday mornings are incomplete!!
Vati dal means soaked and crushed lentils generally chana dal. I used dal and rice both in proportion of 4:1, after grinding both with curd, I let it fermented for overnight. Seasoned it with ginger chilli paste, turmeric, asafoetida n salt. Added fruit salt (eno) to make it fluffy and light.
Why this dish is so special!?? Fermentation brings that little sourness which enhances it taste and nutritional value.
Here in Surat, khaman is one of the very popular street foods , it is very common to see people standing at the khaman stalls for their Sunday morning bing!!
Well, to prepare it at home Is not very hard at all, you need to take each ingredient in a right amount and give adequate time for fermentation.
