Methi thepla or dhebra –
This fenugreek flavoured soft bread is Gujarati’s staple food.
It has a long shelf life so very versatile snacks for travelling and picnics.
Fenugreek leaves has lot of health benefits, especially in cold weather.
In south gujarat we use the smaller leaves methi variety; they are crunchy with strong flavours.
Freshly chopped Fenugreek leaves mixed with wheat flour, spiced up with ginger-garlic, green chilli, dry coriander, turmeric and salt.I also like to add sugar and sesame seeds.Since methi has a lot of moisture we need less water and oil to form the dough. Then rolled like a regular chapati and shallow-fried on a tava.
‘Methi na dhebra’ is our regular breakfast so I keep them in stock for atleast 3-4 days and relish with curd.
Side condiments like Jiralu and methiya keri pickle make it more enjoyable!?
