Ravioli Di Barbabietola / Beetroot Ravioli?

Beet infused ravioli dough with cottage cheese, walnuts and cilantro filling in a cheesy white sauce.
This freshly homemade pasta is super unique, delicious and my favourite; its bright maroon colour looks beautiful!!!❤️

My experiment with Beetroot natural dyes continues..

To prepare the red ravioli, first I blended beet with water in a mixer grinder, removed fiber and juice ready!!Combined semolina (rava), salt and beet juice to form the dough.
Protein packed Iron rich filling of grated paneer, cheese, fresh coriander(or spinach), green chilli, salt, chopped walnuts.
Cooked it in salted water, sauteed in butter with garlic and walnuts, that’s nutty crunchy outside and aromatic flavours inside!!
Seasoned with creamy white sauce.
