Undhiu Puri ~ An Amazing Winter Delicacy ❄️
Since winters here are not so harsh or snowy, we enjoy it with the seasonal variety of food dishes that are not only finger-licking good, but are packed with nutrients that keep us healthy throughout the year.
A traditional gujarati curry-
‘Undhiyu’ means ‘Ulta’ ~ upside-down, in villages Undhiu is prepared in a clay pot- ‘Matla’, in which all the vegetables are steamed. The pot is sealed and placed upside-down in a fire pit dug in the ground. This slow cooking method gives distinctive flavour and aroma.
Surati undhiyu made of winter special vegetables like surati papdi, egg plants, potato, purple yam, sweet potato, banana and the masala is prepared with sesame seeds, peanuts, coconut, ginger, green chilli, some dry spices and lots of green garlic + fresh coriander.?
