Vangi bhath / Brinjal Rice
Vangi bhath is a delicious aromatic rice dish from Karnataka; it is a combination of eggplant, rice and indian spices.
My father grew up in Bangaluru, Karnataka and spent a couple of decades there. My grandmother brought ‘Vangi bhath’ recipe from Bangaluru when they settled here in gujarat.. along with other authentic food of Karnataka like Idli, sambhar, dosa, meduvada, rasam etc. My mom also prepares this rice with a traditional method.
I’m fortunate that I grew up enjoying both food- south indian as well as gujarati. When I introduced Vangibhath to my in-laws, my husband liked the spices and aroma so much. Now ‘Vangi Bhath’ is in our regular meal.?
‘Vangi’ means brinjal ?, it is the star ingredient of the recipe.Besides brinjal, I prefer adding other vegetables like peas, carrots, beans etc. A special spice powder is made; consists of dry roasted red chilli, udad dal, bengal gram dal, coriander seeds, jeera, fenugreek seeds dry coconut, star anise, cardamom, cinnamon, cloves.
Serving with onion tomato raita and plating with love.?
